Being in Detroit, Michigan exposed the region to the Polar Vortex over the last couple weeks. Delivering record breaking cold temperatures, winds and snowfall. As the system moved forward the students of schools all around stayed home due to the severe weather also known as a snow day. Keep in mind that I have a 14 year-old son that will eat a months worth of groceries in a week. I had to prepare something for him on this last day that he’s been asking for- Taco salad. I mean, I only let 2 packages of meat spoil due to my hectic schedule. With moments to spare before I was to head out the door for work, I whipped it up in about 20 minutes. A very simple and comforting meal for a teenager that averages 3 helpings of every dinner.
The things you’ll need:
• Doritos Taco or Nacho flavor
• Ground beef
• Taco seasoning
• Mexican Blend Cheese
• Taco sauce/salsa
First thing you’ll need to do is brown and season the meat with the taco seasoning pack. During the browning of the meat, pit and remove avocado from skin. Place flesh of the fruit into a bowl. Stir meat to ensure it’s covered with flavor. Pour guacamole mix into bowl with avocados and mix together. (mashing the fruit during the mixing step). Add the lime juice stir, cover and place in refrigerator.
After meat has been cooked through fully, strain oil and cover.
We like to mix our own portions of food around here! So I keep everything separate and allow him to make the amount he wants. However, I was on my way to work and decided to take some for lunch. This is how I stored it in preparation to consume later on in the evening.
It’s not one of my most fancy meals but it’s one of my son’s favorites!!! Needless to say when I got home from work the contents of the meal were GONE. 🙂
